Vordonia Athenolia Extra Virgin Olive Oil is a delicacy for true connoisseurs, and here's why:

  • 33 Percent Extra Virgin Olive Oil. My olive to oil pressing ratio is 1 kilo of oil from 3 kilos of olives (one of the highest ratios in the world). Which means 100 pounds of olive oil divided by 3 = 33 percent Extra Virgin Olive Oil (one of the highest percent olive oil in the world)? The higher the percent olive oil the closer to the “Naked Taste of Olives” and greater the quality.
  • Shelve life over 8 years. Following in my father’s footsteps, I fill 5 small bottles of oil from each year’s harvest. Example: The bottles are dated (2001 harvest) and numbered (3, 4, 5, 6, 7, and 8). We would then open bottle number 3 after the third year, number 4 after 4 years and so on, up to bottle number 8 (eight years), testing for flavor, aroma, color and viscosity.
  • Blow the cork of the bottle. When I slightly over fill my Vordonia Athenolia Extra Virgin Olive Oil bottles, the cork will blow to the ceiling like a fine Champagne.
  • Old Fashion Pressure Press. From start to finish each pressing lasts over 3 hours.
  • Single Cultivar (Athenolia Olives).

  • Cold pressed and cold separated. Always ask your olive oil producer or salesman “what temperature was the olive oil separated from it's natural water content”. I separate my oil at 42 degrees. Insuring my oil’s pure flavor, aroma, color and longevity. Cold Pressed ONLY means that the olives were brought to the press cold (Olives are a winter fruit).
  • Limited Numbered Bottles. I produce a Rare Artisinal Single Cultivar Extra Virgin Olive Oil. Each years harvest range from 600 numbered bottles to 1400 numbered bottles.
